Another shop that comes to mind would be Via Bikes in Philadelphia. I don't remember seeing any photos of their shop on their website, but there's way more cool bike stuff anywhere you look there, four? floors of it.

I have looked in my messages and the archives, but am not sure exactly how to search for what I am looking for. I seem to remember, in the last few months, seeing a message that included either a link to, or photos of, a bike shop (maybe in NY) that looked more like a museum than a bike shop. It had walls full of components to the point where you could hardly see any wall. If anyone remembers this, please send me the information (either the link, or the forwarded message) off line as I would like to share it with someone.
