Right now in the depths of winter at 7,000 ft. I ride my (OT) Pugsley with 4" tires at 10 psi on snowy trails. At least it's steel.
But when the roads clear up a bit and the temps rise I'll be riding one of these steel bikes:
late 70s Sekai Professional 4000 with non-period-correct Campy 10 drivetrain (compact) and 25mm tires Rivendell Rambouillet on Grand Bois 30 mm tires Rawland Sogn set up with either 650B GB Hetres (42mm) or 700c 32mm studded tires '84 Specialized Stumpjumper with bullmoose bars and thumbies and 50mm Big Apples
When the trails dry out I'll be on my '09 Stumpjumper (completely OT, aluminum and full-suspension).
Looks like I need a restoration project...
