On my (now) single speed Schwinn (Giant) "World Sport" I simply took off the front and rear derailleur stuff, shortened the chain to fit the already center-lined 3rd cog (18) on a 5-speed freewheel and 39-tooth crankset and was done... no redishing necessary (the very slight weight drawback of of leaving a 5-speed freewheel on is insignificant on a commuter/rainy day bike).
