The stuff I used when I built frames was EF45 (Easy-Flo 45% Silver Brazing wire), and I bought it by the (Troy IIRC) ounce.

Brian is correct in referencing the 800-degree Fahrenheit Temp. as the upper limit of soldering - all Engineering texts I've seen reference 800 F as the cutoff. Above that, and below the Temp. where the base metal melts, you're brazin' dude.....

Also IIRC, EF45 flows at about 1150 F (when the steel is a dull cherry color - a beautiful sight).
