I've worked on many bikes with rusty looking chains (although none as nice as your Cinelli). Before you try anything drastic, I've found that lubrication and a rag works wonders. Something like WD-40 and backpedaling while gripping the chain with a rag has removed lots of discoloration and rust. I'd try that even before dissasembly. Let us know.
