Yes, the Christophe screws were really meant for mounting the clips on non-threaded pedal cages. They also included that funky backing plate for use with pedal cages that didn't have special locating holes for the screws. By the way, in that respect, the French pedals may have been preferable since you had more leeway in positioning the clip.
Nevertheless, in the world of my youth (which apparently was a less refined place than your's) the threads in STEEL Campagnolo pedals did get stripped from time to time by overly zealous mechanics (although not by me), no one could afford to carry around a Campagnolo "T" wrench while on tour (or if you brought one to the Kissena Park velodrome it quickly disappeared) and people rode their bicycles in the rain which sometimes causes the bolts to rust (which in turn caused the threads to strip).
Plus, there obviously were shops that replaced the Campagnolo bolts with the admittedly less desireable Christophe peices. perhaps it was "a New York thing".
Anyway, I do admit though to occasionally snapping the head off
of TA crankset bolts.
