If there are only a few limited areas where the color is worn, black shoe dye, available at any shoe shop, does a good job of touchup.

Not sure that anyone else has done this, but I have in the past taken a few old Cinelli Unicanitor saddles to be re-dyed at a reputable automotive upolstery shop, and they did a fabulous job.
