We used to polish up the bearing surfaces of hubs with Simichrome polish. Just replace the grease with Simichrome, spin them around until they are smooth, then clean thoroughly and replace with good quality grease. I prefer Phil Wood grease, since it is waterproof and very durable, but I'm sure you have your favorite. This technique worked great on some of the non-Campangnolo stuff that hadn't had as much attention from the factory.
