I don't know about the sniping *services* but the sniping *tool* I use (a perl script I leave running on one of my computers) allows me to not commit to a bid until the last moment, and not require me to remember at the last moment to make the bid. I can snipe on multiple interchangeable items and if/when I win one I can cancel the rest without having to worry about winning more than I need.
