Seatpost is easy. American Classic. Weyless is an alternative if you can find one.
Other suggestions: Hi-E hubs. Avocet components meet your criteria also. Pino Moroni skewers are a must. Do not fall for the Coolgear saddle. Bob Reedy, Weyless or Demco pedals. BBs from American Classic or the super rare Teledyne sealed bearing unit.
Brakes- Mafac or Spidel sidepulls or CLB Spaceline or the snazzy CLB centerpulls.
Some of these components are a bit before 1981 and had stopped production by then.
