By the early 80's, the top end French bikes usually had Maillard 700 pedals. I believe Maillard also owned the Lyotard and Atom names by then, but these names were usually seen on less expensive bikes, with Maillard, or maybe Spidel badged pedals on the top models. I'm not talking about constructeur touring models, though, as those frequently used TA pedals. BTW, by the 1980's French bikes, at least those sold in the US, had mostly switched to English pedal thread.
I believe the seatpost would still typically have been Simplex, although probably an alloy model instead of the classic badged steel one. One also saw the ATAX carbon/composite/plastic post, never was sure what it really was made of. One did see the SR Laprade, which after all was originally a French design, but I think the Laprade was not usually on the top models

Were they using japanese seatposts on higher end models? (The way Gitane was putting japanese cranksets on some models on the higher end.) Mavic seatposts didn't appear till later according to my archive searh results. So was it Simplex posts only, unless it was a campy model like Gitane's?
Were Atom pedals typical? Were Gippiemme pedeals ever used on French bikes. (I have a pair of each.) TAs were rare I think. Were Lyotards used on the higher end?
