There's a ton of good documentaries, but if you're just talking about fictional dramas that involve bicycles, Breaking Away, The Bicycle Thief, The Triplets of Belleville, and Bejing Bicycle, are my favorites. Personally, I didn't think either Quicksilver or American Flyer were worth my time. There's also PeeWee's Big Adventure, and 6 Day Bike Rider.

One lesser-known film that most of the folks on this list would probably enjoy is "2 Seconds," a Canadian indie about a former mountainbike racer who gave up racing after she choked in the gate. She takes a job as a bike messenger and is befriended by a curmudgeonly old bike shop owner (said shop is filled with on-topic bikes... this guy'd be a CR-Lister for sure but I doubt he owns a computer). Nice little film.
