I must throw in a big pitch for Ted Ernst's fitting services if you are in the So. California area. I have too many bikes, of course. And there is a big difference in my body after riding the ones Ted has fit for me, and the ones I have not yet spent the dough to have done by him.

Worth every penny. And Ted has access to the old parts, even Technomic stems, in case you come up a little short on the project you're having him fit.

I'm sorry this is no doubt off-topic here. I have gotten some good answers in the past on knees from the folks over at the iBob list, where it can be discussed freely and at length (along with everything else from soup to nuts).

Anyway, if you're in So. Cal. go see Ted and ride your vintage steeds with happy knees!
