I don't set up "classic" bikes with modern components (although I do use DT spokes when building up classic wheels), as it just doesn't seem proper to me. On the other hand, I do set up more modern (they are KOF) bikes/frames with such things a toe clips/straps/non-aero cable routing/down tube shifters (friction & indexed); older Cinelli, 3ttt bars & stems (hey, they are silver!!). As far as shoes are concerned: I resisted clipless for many years back in the 80s, but finally bought a pair of Mavics (made by Look) in 1989. I rode these for about four years and then, one day, had a flat while out riding. These were clincher tires and I replaced the tube only to have it also flat about two miles later. I did not have a repair kit (won't make that mistake again, but most of my bikes have tubulars) and had to walk back home!! I ended up taking off my shoes and walking barefoot about 3 miles.....that was it for me for clipless!! I generally use a smooth sole touring shoe (I have Dettos; Patricks; Zeus) so I can walk if I want (for me, it make the riding experience much more pleasant to be able to do so). If I really want to try and go fast (and not stop to sight see), I still have Dettos with an integral cleat, but walking, should it be necessary, is still rather problematic.
I've tried Shimano SPDs, but I will only use them for off-road as the platform feels too small when I'm road riding. My favorite pedals? Campagnolo Gran Sport, KKT and Atoms (700/600 series).
I also don't use STi nor Ergo (although Ergos are, nice as they can truly be repaired) and will not buy a road bike if it is does not have braze on down tube shifter bosses (stubborn!!) or 1 inch threaded steerers. Shifting from the down tube just feels "right" but I do have a couple of bikes set up with bar end shifters (indexed).
I agree however, it is <mostly> about enjoyment, but the recreation of a now 'extinct' experience is one to savor as well (tubulars rule!!).

Do what you darned well please with your bike. But the same arguements f or using modern pedals and shoes on a classic CR period racing bike (efficiency, comfort etc) can be used to justify replacement of EVERY single original component on the same bike from derailleur system, shifters, saddle, wheelset to the Spiderman spandex body suit you think yo u look really hot wearing. Indeed, are steel frames as "efficient" as carb on fibre?? Don't know. Or care. So it gets back to "Why do I collect and ride classic racing bikes". And if you can answer "efficiency" and "practicality", I give up entirely! You might as well collect snow shovels ...
